Ingredients

  • 100g frozen shelled edamame (or 150g in pods)
  • 1 medium egg
  • 1 tsp soy sauce (or reduced-salt soy)
  • 1 tsp toasted sesame seeds
  • Pinch of chilli flakes or a little chilli crisp (optional)
  • A squeeze of lime

Method

  1. Lower the egg into a small pan of boiling water and cook for 6½ minutes. Lift out into cold water.
  2. Add the edamame to the same water for the last 3 minutes, then drain.
  3. Toss the beans with the soy sauce, sesame seeds, chilli and lime.
  4. Peel and halve the egg and sit it on top.

Tip: Edamame in pods is slower to eat, which some people find helps with pacing. Shelled is quicker if you're short of energy.
